Millets contain resistant starch and slowly digestible starch plus high fiber. These slow carbohydrate absorption, blunt post-meal glucose spikes, and improve insulin sensitivity. Adding vegetables further lowers the overall glycemic load. Studies and clinical observations support millets for better glycemic control and reduced progression of prediabetes.
